Deployment tool - Customizing the installation

Is there a way to customize the installation of VNC through the
deployment tool?

Ie. When you choose to install VNC through the deployment tool it just
does a standard deployment.  You don't have the ability to choose not to
install the viewer, not put the icons under the start menu, and register
and start it in service mode.  Is there anyway to do this, or do I need
to delete the icons through a login script and delete the viewer the
same way?
