Brian,

We're using InnoSetup for the installer, so the /silent and /verysilent
flags will work & will do a default (server + viewer) install.  You can then
separately apply registry settings to configure the server, if required.

Alternatively VNC Enterprise Edition
(http://www.realvnc.com/products/enterprise) will include access to the VNC
Deployment Tool, which is capable of installing & configuring VNC servers on
remote NT/2K/XP-based systems.
