How can I remove the complete VNC entries from the registry

You can not remove them because of the permissions on the keys. Open regedt32 and browse to the keys.  Click the Edit menu and then the Permissions option.  From there, adjust the permissions to allow you to do what you would like.  I've run into that in the past, also.

How can I remove  the complete VNC (in this case the server) enteries from
the registry.
Under  Hkey_local_machine\system\control.....\legacy_winvnc\00000 are
different
entries, for example:
Service=winvnc
DeviceDesc=VNC Server

But I can`t remove them

How can help me
