VNC Network Setup Question

I've read about how everyone uses VNC with SSH but I'm not sure how the
computers are set up?
Does the SSHd box have two nic's? One for the "public" network that you ssh
tunnel back to the client/vnc machine, and one for the "trusted" network of
only the vnc server and sshd machine.
What I would like to do is have the VNC server on my NT machine connected to
my dual-homed linux box running sshd. They are connected together using a
hub with eth1 on the linux box and eth0 on the vnc server NT box. On the
linux box, I want to use eth0 for normal traffic and to allow a vnc client
to ssh through eth0 to eth1 and get to the NT box.
Is this setup a common vnc/ssh configuration, or is there a better way to
isolate the vncserver from the rest of my network. I'm learning
networking/routing so any help is appreciated.
