Throttling back communication speed?

Some friends and I are running rather large LAN parties (50-70 people) in my
area and have come across a problem.

We recently began using VNC viewer to remotely administrate our DHCP, WWW,
and game servers. We have found that it uses quite a lot of bandwidth on the
segments we run it from... enough to make the games our attendees run drop
frames and run sluggish.

We currently run our network through a Netgear SW510 Switch. 8 10BT hubs
connect to this switch for clients, and 2 100BTx hubs connect to it for the
servers. This /should/ be more than enough bandwidth for everyone to be
happy.

We are running our servers in 16 color mode with plain solid backgrounds to
try to decrease the amount of bandwidth VNC uses. Are there any other things
we can do to throttle down the bandwidth to a more reasonable level?
